It’s one of my friends birthday’s tomorrow, and she asked me if I’d mind helping her out with a Victoria sponge recipe which she could make. Well, of course I said yes! Helping someone out with cooking? How could I say no?
I absolutely adore Halloween. The funky macabre decorations adorning the house (I think I have just as many, if not more, Halloween decorations as I do Christmas ones!), dreaming up weird and wonderful costume. Whether they be strange, cute, funny or scary, I love the process of coming up with a costumes (even if it is a last-minute rumage through the wardrobe to find something that will do!)
But above all, I love being able to go a little wild in the kitchen.. making foods that at any other time of the year would be deemed repulsive, creepy, and downright vile… At Halloween, anything goes!
Bread making is a magical process. You start off with these powdery, every-day ingredients; flour, sugar, salt, water. All run of the (flour) mill (sorry) and very mundane. Then you add in that last mystical ingredient, Yeast. And then everything just comes to life. That limp, lifeless doughy lump you began with suddenly errupts into a fantastic yeasty monster, ready to be tamed, kneaded and baked into crusty perfection.

The other day, I simply had no idea what to cook for dinner. Pasta came to mind, or perhaps rice? Served with some kind of sweet potato dish?
Before I knew it, sweet potatoes, kidney beans and sweetcorn had leapt out at me, declaring that what I would be making for dinner, would be Mexican-themed.
It’s amazing how fast time flies. It only feels like we moved into the new house yesterday, yet it’s already been five days. Five days of manic packing, moving, cleaning, more moving, and heaps of unpacking.
It’s nowhere near done. I think it will probably be several weeks before we’re completely unpacked and settled in, but I don’t mind. It’s nice to just sit back, breathe and relax, enjoying the new house, the new scenery, the new atmosphere.
I also can’t quite believe that it’s Autumn already. The leaves are changing, autumnal vegetables are showing up in the shops, Halloween decorations have begun to appear.
And it’s getting colder. So much colder.
I’m sat here typing this in a warm jumper, thinking I might need to go fetch myself some gloves..
This is definitely soup weather.
Right now, I’m in the middle of a war.
On my side, I have boxes, scissors and packing tape.
On the other side – Clutter, dust, and over a year and a half of accumulated…. stuff.
So far, I seem to be winning the battle. Though that’s difficult to see right now, with boxes blotting out the light from the windows, and piles of “things” gathered in every corner, waiting to be sorted. Waiting to strike.
Moving house really can feel like an up-hill battle at times. Every single thing that you own is dragged out of the dark depths in which it’s hidden for who-knows how long, piled up in heaps and boxes to stare you in the face, making you ask yourself – Why on earth did I keep That? Where did that come from? Do I need this?
In the face of all of this chaos, you become ruthless. Throwing away things that once, a long time ago, you had some reason to keep that now alludes you. It’s not only a battle with your house and your possessions, but a battle with yourself. As you try to cut down the never-ending mountain of boxes that need to be moved…
But it’s not all bad.
Sometimes, you can really take things for granted. The quiet stillness you get when you have the house all to yourself. Being able to wander around in the middle of the night, to nip and grab a drink at any hour (without fear of waking anyone up!). Snuggling up on the sofa with your loved one, watching a film together. Under a duvet perhaps if it’s cold, with delicious food and maybe popcorn. These are things that happen all of the time, yet you never really stop to think about them.
There’s a bit of a grey area I think as to what “Banana Bread” should be called. I’ve eaten platefuls of what’s always been known as “Banana Bread” in the past, but to me it always seems a bit too decadent, too rich, to be simply classed as bread.
After all, I can hardly imagine anyone wanting to use two slices of this to make their breakfast BLT (That’s vegan bacon, mind you!)
I had very colourful dreams last night. Bright purples, glowing reds, vibrant greens, and stunning yellows….

Sometimes, a recipe will take weeks, maybe even months, and occasionally years to perfect. You’ll start off with an idea, or a vague notion of what might work. And you play around with it, tweaking it here and there, until finally you end up with what you dreamed up all those many days ago….
That isn’t what happened here.
